When you walk through the doors of Don Quijote Restaurant, you’re greeted not only by the aroma of Caribbean spices and home-cooked meals — but by a story of perseverance, heart, and community.
Founded in 2000 by Sandra Almonte, a proud native of the Dominican Republic, Don Quijote was born from a dream: to bring the authentic flavors of her homeland to Manchester, New Hampshire, and to create a place where everyone — regardless of origin — could feel at home.
At that time, few Latino restaurants existed in the state. Through dedication, authenticity, and love for her community, Sandra transformed Don Quijote into one of the most recognized and beloved restaurants in New England.
Rooted in Tradition, Inspired by Diversity
Don Quijote’s menu is a reflection of Sandra’s Dominican roots and the rich diversity of her customers. From mofongo and pernil to pollo guisado, pescado frito, and chicharrón, every dish carries the warmth of abuela’s kitchen.
As New Hampshire’s multicultural population grew, so did the restaurant’s identity. Guests from Colombia, Guatemala, Honduras, Mexico, and beyond began to shape the culinary experience. Sandra listened — adapting flavors, balancing spices, and building a menu that celebrates the entire Latin American community.
“Our food is Dominican at heart,” Sandra says, “but our table is open to everyone.”
Each plate tells a story — of migration, adaptation, and pride. It’s food that unites, nourishes, and reminds people of where they come from.
A Restaurant with Purpose
Beyond serving exceptional food, Don Quijote Restaurant stands as a pillar of compassion, opportunity, and empowerment in Manchester.
Sandra’s philosophy goes far beyond business: she believes in creating pathways for others. She offers affordable housing not only to her staff but also to members of the community, providing safe and stable homes at rates below market value — helping families and individuals find dignity and hope.
Inside the restaurant, she hires and mentors people rebuilding their lives — from those coming out of transitional housing to newcomers learning English. Don Quijote is more than a workplace; it’s a safe space where second chances are born, and where everyone is treated like family.
“Everyone deserves a chance,” Sandra says. “This place may be small, but it’s filled with heart — and everyone here belongs.”
Her leadership extends far beyond her restaurant walls. Sandra serves on the Board of Directors for NeighborWorks Southern New Hampshire, working to create affordable housing and community development in Manchester, Nashua, and surrounding areas. She is also a proud board member of the Conservation Law Foundation and Manchester Proud, advocating for education, environmental justice, and inclusive opportunity for all.
Leadership with Heart
Sandra’s story is one of resilience, generosity, and vision.
Born in the Dominican Republic, she immigrated to the United States as a child and learned early the value of hard work and perseverance. Her parents instilled in her the habit of saving, the importance of education, and the belief that success is meant to be shared.
In 2022, Sandra was named one of New Hampshire Business Review’s Outstanding Women in Business, a recognition that celebrates not just her entrepreneurial success but her dedication to the community she loves.
Her mentorship and advocacy have inspired many — especially women and immigrants — to find strength in their stories and purpose in their challenges.
